Cracked Pepper Foccacia

When I was younger, my mom frequently used her bread-maker to make fresh bread and strawberry mango jam on Sunday mornings in the summertime. I loved the jams that she used to make and yearned for the weekend mornings when I would awake to the wafting smell of syrupy strawberries circulating from the kitchen. Needless to say, I was more than heartbroken when I heard the unfortunate news that our precious bread-maker had ceased to work. Fast-forwarding many years to today, my craving for homemade bread remerged. But, I faced a huge dilemma: I found myself without a bread-maker and lacking in the ingredients to make jam. The once revered sourdough bread topped with delectable preserves was out of the question; however, I could make a type of bread by baking a buttery rendition of Cracked Pepper Foccacia. Dilemma solved!

Step 1: Mix Olive Oil, Salt, Pepper,
Yeast, and Water Together


Step 2: Stir in Flour to Mixture and Put
Into Ball; Let Rise for 45 Minutes


Step 3: Stretch Dough Into Pan; Spread
Rosemary, Thyme, and Salt On Top


Step 4: Bake, Slice, and Serve With
Balsamic Vinegar and Olive Oil


I was amazed at how well this bread turned out (especially considering the fact that I baked it for a few minutes too long!). Personally, I think this tastes best when fresh out of the oven. Although I liked the rosemary and thyme spices combined with sea salt, I’d like to experiment with other items from the flavor palette next time. Perhaps some kalamata olives, peppers, sundried tomatoes, or whole garlic cloves for next time?

Lemon Cheesecake Squares with Fresh Berries

Even though my hips and arms would like me to nix sugar, I simply can’t resist. But, lately my taste buds have become bored of all of the indulgent and extremely rich winter themed desserts. Instead of alleviating my sweet tooth with a heavy dessert, I opted for something lighter and fresh: Lemon Cheesecake Squares with Fresh Berries. I wanted to make it for a pleasant surprise even though it is completely a summer dessert!

Step 1: Create Crust by Smashing Graham
Cracker Cookies and Combining with Butter


Step 2: Cream Sugar and Cream Cheese Together;
Beat in Egg, Sour Cream, Lemon Juice & Peel, and Vanilla


Step 3: Bake, Cool, and Serve with Berries!

Eating this dessert definitely reminded me of summer. Although I enjoy certain aspects of winter, I do miss the warm sunshine and season of colorful, flowing dresses. Do you think that the dreary and desolate days of winter will pass by more quickly if I continue to make summer themed desserts? That is probably a long shot, but the thought is nice!

Chocolate Covered Strawberries!

Do you find yourself burning desserts in the oven? Do you attempt to bake only to realize that you don’t have enough ingredients? Do you sometimes believe that cooking something from scratch is just too expensive?

I realize this already sounds like the beginning of a terrible infomercial; however, bear with me, because if you have felt any of the grief or agony from the prior three questions, you may want to consider making Chocolate Covered Strawberries. Simply, Chocolate Covered Strawberries are:

  1. Simple – Melt, Dip, Set – doesn’t get much easier than that!
  2. Few Ingredients – Only TWO needed!
  3. Inexpensive — $3.99 (Strawberries) + $2.99 (Chocolate) = $6.98 dessert (shared amongst a few people of course!)

Just make one batch and you’ll be completely smitten. In fact, I 100% guarantee it. All right, perhaps I took the infomercial influence too far, but you get the point!

Step 1: Clean Strawberries and Dry

Step 2: Melt Chocolate and Dip Strawberries


Step 3: Set on Parchment Paper
for 30 Minutes and Enjoy!

I’m a firm believer of Strawberries and Chocolate. It just never seems to disappoint!

Handmade Birthday Card!

For me, shopping for any type of holiday or celebratory card is always stressful. Now, that last sentence may sound strange; therefore, I must clarify my muddled thoughts. Since I am very indecisive when it comes to buying the perfect card, I will find that a vast assortment of cards will mysteriously appear in my shopping basket as I’m diligently searching for the perfect card. Then, I often find myself at the cash register with six cards instead of one for a friend’s birthday. I can’t decide and then have to revisit the card section of the store in order to make a decision. Unfortunately, I usually don’t accomplish much in my card shopping expeditions. So, I figured that I would make a few birthday cards this month instead of spending over my allotted time searching for cards and, in turn, buying too many cards.

As a result of this ingenious idea, the following was created:

These cards were simple – it just took a little patience, meticulous scissor-cutting skills, and some handy glue. Now, after making these cards, I must ponder what type of cake I will make for my friends and family who share birthdays this month!

Homemade Lasagna

I just spoke via Skype with a friend who I haven’t been able to speak to in months. Currently, she is living in Seoul, South Korea and teaching English to kindergartners. Although it’s been a vast adjustment, she has enjoyed all of the challenges, scenery, and culture. She is a very brave young woman and I’m proud of her for pursuing that opportunity!

I especially enjoyed hearing about her travels and new experiences. Since I love food and trying new things, I undoubtedly felt compelled to inquire about South Korean cuisine. Basically, mixtures of rice, noodles, vegetables, and various meats comprise most meals in combination with plenty of spicy flavors and seasonings.

However, although she is having a blast sampling Korean cuisine and other fare from her travels, my friend does miss traditional meals from home as well as classic Southern dishes. That being said, I decided to make one of her favorite dishes and dedicate this post to her (this may seem cruel – but, we talked about it on Skype and she though it would serve as a great reminder of home!). Since I don’t have a deep fryer, I thought that some type of pasta dish would be best. Instantly, the thought of lasagna came to mind. So, after replenishing ingredients at the store, I made a delicious Mushroom and Sausage Lasagna.

Step 1: Saute Onions, Chopped
Mushrooms; Add Sausage and Garlic

Step 2: Layer Noodles, Tomato Sauce,
Cheese, and Sausage Mixture (Alternating)

easier to use and taste better!]

Step 3: Bake, Slice, and Enjoy!

Lasagna can be a great meal when done right. Often times, an overabundance or shortage exists of one of the items and in turn creates a taste bud rollercoaster. For example, I have had lasagnas in the past where the amount of ricotta cheese was too prevalent or lasagnas which contained a sparse serving of meat/vegetables and seasonings.

The key to a great lasagna is setting up the best ratio of noodle to sauce to cheese to meat/vegetables. This can be found by happening to stumble upon a great recipe or through trial and error. In my case, I was lucky and happened to find a great recipe on the first try!

Fax Me, True Love, Love Bug, and All That Jazz

Question: What is the one sugary delight that I enjoy at only one specific time of the year?

Answer: Necco Sweethearts.

Well, actually, I lied. That and Candy Corn. I’ve linked a fondness of these candies to Valentine’s Day and Halloween. If it isn’t Valentine’s Day or Halloween, you won’t find me handing out these candies or sporting them in my purse. Plain and simple, it’s just how it is. Now, as it relates to Necco Sweethearts, I think my liking for them stems from my affection towards the sappy and sometimes quirky sayings printed on these quaint hearts. My all time favorite will always be, “Fax Me.”

A friend and I decided to immerse ourselves in the lovey-dovey spirit of Valentine’s Day by making some type of Valentine’s Day treat. My friend cleverly found a recipe from Martha Stewart that features a blown-up version of the classic Necco Sweetheart in Red Velvet cake form. To us, this was the ultimate Valentine’s Day recipe. Besides, who could resist duplicating infamous Necco Sweethearts in the form of delicious red velvet cake complete with personalized cheesy sayings? I know we couldn’t!

Step 1: Combine Red Food Coloring,
Cocoa Powder, and Boiling Water

Step 2: Cream Butter and Sugar

Step 3: Mix Dry Ingredients; Add Red Mix
and Dry Ingredients to Wet Ingredients

Step 4: Mix Cider Vinegar and Baking
Soda; Add to Batter

Step 5: Bake and Cut Out Hearts
With Heart-Shaped Cookie Cutter

Step 6: Frost and Get Creative!

I just couldn’t resist “Fax Me”. Perhaps we had a bit too much fun with these, but at least we made delicious treats!

Recipe Book

Since I started baking and cooking more frequently, the recipes that I’ve used have resulted in a cluttered mess of papers around my desk, kitchen, and bedroom. I created a folder to stash these recipes in for further use, but it just didn’t seem to help my organization in this area. Normally, I am a very organized individual; however, when it relates to the organization of recipes, I’m quite lost.

A few months ago, a friend showed me her mother’s Recipe Book which encompassed many years of recipes. She had professionally bound this book and added a unique design and title for her own personalization. Enamored, I knew I had to make my own Recipe Book.

However, I faced a dilemma. I did not want to copy my friend’s mother’s Recipe Book. As I started brainstorming creative designs, the idea of making some sort of collage suddenly dawned on me. Even though collages remind me of middle school days (when every girl had a personalized collage for each class notebook), the thought of creating one seemed cost-efficient, easy, and would make a colorful appearance. Instantly, I set forth to find my trusty pair of scissors, glue stick, old magazines, and white notebook. An unexpected few hours later, my artistic attempts resulted in the following:

Since I have not made a collage in years, I had forgotten how meticulous my scissor-cutting skills needed to be. But, with my determination on my side, I was able to find plenty of food related pictures, diligently cut them out, compile them in some sort of order, and glue them onto the final product.

I’m hopeful that this new Recipe Book will help with my organization efforts (key word being “hopeful”). But, I must say, I’m pleased with the results!

When the Moon Hits Your Eye Like a Big Pizza Pie, That’s Amore!

“That’s Amore” by Dean Martin started playing on a television show the other night. I think that my subconscious engulfed the words “Pizza Pie” because a few days later, I felt the urge to make a pizza when I woke up on Sunday morning. I’m not sure if this song is where my innate desire originated from, however, I’m glad that it did because it gave me the chance to prepare a fantastic dinner!

The decision to make pizza was definitely prime. I didn’t have to visit the store because I could combine ingredients I already had at home. Plus, I also happened to have a packet of active dry yeast in the cupboard, so I could be entirely authentic and make the pizza dough from scratch! After much pondering, I decided to make a simple Three Cheese and Tomato Pizza.

Pizza Dough

Step 1: Mix Active Dry Yeast With Warm
Water and Olive Oil; Let Sit for 10 Minutes


Step 2: Combine Yeast Mixture
With Flour and Salt


Step 3: Gather Dough into a Ball; Put In Bowl
and Let Sit Under a Cloth for 2 Hours (To Let Rise)

Three Cheese and Tomato Pizza 

Step 1: Cut Tomatoes; Mince Garlic
and Add to Two Tablespoons of Olive Oil


Step 2: Roll Out Pizza Dough


Step 3: Place Garlic Oil on Dough, Put
Cheese and Tomatoes on Top, Bake!

I should have baked the pizza a few minutes longer (to brown the edges), but at least I learned a lesson for next time. All in all, the pizza tasted great and I think I can still hear that Dean Martin song playing in my head…
